It won't be long now...

Sketchapalooza 7 starts two weeks from today! For those of you that have signed up already, we will be sending out the class details early next week. For those of you that haven't registered for class yet - what are you waiting for?! ;) I am really excited about this class - we have all been busy working behind the scenes to bring you a month filled with awesome sketches and sample layouts.

WW Pistachio Dessert

This is one of those - what can I toss together types of dishes. I remembered something like this from when I was a kid but had no idea what the exact recipe was so this is what I came up with. 

Ingredients

1 20 oz can crushed pineapple in pineapple juice
1 pack of fat free, sugar free pistachio pudding
1/2 container of lite whipped topping (you can use the whole thing if you like it fluffier)
1 16 oz container of fat free cottage cheese
1/4 cup chopped nuts (pistachios are great - I use pecans) *optional*

Mix all ingredients together. Serve cold.

This makes a big batch and for those doing weight watchers it clocks in at 2 points plus per 3/4 cup. It is not pretty but it is yummy and sweet for a nice low cal dessert :)

I don't know about you but for me some weeks just seem to drag by - and this happens to be one of them. Let's start the week off right!

We are starting the week off with another chance to win a spot in our upcoming Sketch Class! It is super easy to enter just look through your layouts and pick your favorite one made during at a Feeling Scrappy class.
