WW Pistachio Dessert

This is one of those - what can I toss together types of dishes. I remembered something like this from when I was a kid but had no idea what the exact recipe was so this is what I came up with. 


Ingredients

1 20 oz can crushed pineapple in pineapple juice
1 pack of fat free, sugar free pistachio pudding
1/2 container of lite whipped topping (you can use the whole thing if you like it fluffier)
1 16 oz container of fat free cottage cheese
1/4 cup chopped nuts (pistachios are great - I use pecans) *optional*

Mix all ingredients together. Serve cold.

This makes a big batch and for those doing weight watchers it clocks in at 2 points plus per 3/4 cup. It is not pretty but it is yummy and sweet for a nice low cal dessert :)

I make a somewhat similar dessert but just use Cool Whip and 1 box of pistachio pudding mix (mix these 2 ingredients together well so it isn't gritty). Add 1 can crushed pineapple in juice and 1ish cup marshmallows. Let set in fridge overnight so marshmallows absorb the pineapple juices.

This is always what is requested for family gatherings and funeral luncheons at church.
