Blueberry bran muffins

We tried these the other day and loved them. These have lots of fiber and use fruit instead of oil so it's a treat you can feel good about giving your children. (But, there is quite a bit of sugar...you could try cutting the sugar in half but I haven't tried that yet.)


Low-Fat Blueberry Bran Muffins
1 1/2 cups wheat bran (I used a combination of wheat and oat bran)
1 cup nonfat milk
1/2 cup unsweetened applesauce (or you could use mashed banana)
1 egg
2/3 cup brown sugar
1/2 teaspoon vanilla extract
1/2 cup all-purpose flour
1/2 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup blueberries (I used frozen)

Directions:
Preheat oven to 375 degrees F (190 degrees C).
Grease muffin cups or use paper muffin liners.
Mix together wheat bran and milk, and let stand for 10 minutes.
In a large bowl, mix together applesauce, egg, brown sugar, and vanilla.

Beat in bran mixture.
Sift together all-purpose flour, whole wheat flour, baking soda, baking powder, and salt.
Stir into bran mixture until just blended.
Fold in blueberries.
Scoop into muffin cups.
Bake in preheated oven for 15 to 20 minutes, or until tops spring back when lightly tapped.

Oven Baked Omelette

Today I am sharing a recipe that is just awesome if you are trying to watch your weight or just eating healthy. It taste great and you get a large portion! :)

Diet Oven-Baked Omelette

Ingredients
1 container of egg beaters
1/2 cup fat-free milk
1/2 cup reduced fat cheese (any flavor)
3 cups of chopped veggies (your choice)
salt, pepper, garlic powder to taste
2 TBS grated Parmesan cheese
Optional toppings: salsa, hot sauce or ketchup

Pre-heat oven to 375 degrees. Saute veggies in non-stick cooking spray until soft and then add to a deep round casserole dish sprayed with non stick cooking spray. Add in egg beaters, milk, shredded cheese and seasonings. Mix well.

Place dish into oven and cook for 30 minutes. Carefully, pull out rack and sprinkle with Parmesan cheese. Continue cooking for an additional 20-25 minutes until the top has puffed and is firm to the touch. Allow to cool slightly before cutting then serve and top with optional toppings.

Makes 4 servings.
(1/4 of the dish is 140 calories, 3 g fat, 1 g fiber = 3 WW points)

Multi photo pages

One of my favorite things to do when scrapbooking is to create pages with several photos. Sure, one large amazing photo is a lot of fun to create a page with, but realistically, most of my photos are not amazing and I tend to have a lot of them. So multi photo pages are my solution. Often, I will even print two or more pictures onto a single 4x6 sheet so I can incorporate more for less money and space. Here are some multi photo layouts created by the Feeling Scrappy Design Team:

Pink Lemonade Pie

YUM! This is my FAVORITE summer time treat.

You only need three ingredients:
1 graham cracker crust
1/2 gallon of vanilla ice cream (low fat works great)
1 can of frozen pink lemonade

Let your ice cream and pink lemonade sit of the counter to soften for maybe 5 - 10 minutes. Then add these two ingredients to a mixing bowl and mix until well blended. Now pour this mixture into the pie crust. (I will say this is a lot of filling - generally I leave out about 2 cups - and we eat it right away just as soft ice cream.) Replace the lid on the pie and place in the freezer for a few hours or until firm. Enjoy!

Changing the color of metal embellishments

This weekend, I have a fun tid bit for you to try using alcohol inks. Did you know that you can use alcohol ink to dye metal scrapbooking embellishments? I used little heart clips but try this with brads, eyelets or anything else you have that needs new life.


Supplies:
Alcohol ink
plastic baggie
embellishments



Directions:
Put the items into a platic baggie, add a few drops of ink and mix it around (squish the bag between your fingers).

Once covered, pull them out to dry (I used tweezers.)

Altered Formica Chip

Here is a super quick and super fun project that you can complete in about 15 minutes.
Supplies:
Formica Chip
Patterned Paper or Card Stock
Adhesive
Scissors or Sandpaper
Ribbon
Embellishments of your choice

My formica sample is 3 x 5

Cut a piece of paper just a hair bigger the the sample

Apply a lot of adhesive to your formica sample

Now distress your edges - this will make the paper "fit" exactly on the sample

Now you have a blank canvas for playing. Add what ever kind of embellishments you would like.

Here is my finished door hanger for my studio.

These make great little gifts for friends and families - or how about a teacher? Hope you enjoyed!!

Bloody Mary Crock Pot Chicken

This is a super easy and heathy (yet yummy!) recipe. I hope you'll give it a try. Despite how it sounds, it's really not very "tomato-y" tasting. Even my kids like this.



Ingredients:
Chicken breasts (up to four)
1 can cream of something soup (I usually use cream of celery or mushroom)
1 cup V-8 juice (I just use a whole can of V8)
3 cloves garlic-minced
dash celery seeds
2 tablespoons Worcestershire sauce
4 dashes Tabasco
Diced celery (I have added carrots as well)
**Adjust the seasonings to your personal preference.

Directions:
Combine ingredients in crockpot. Add chicken and cook on low all day. Serve over rice.

Time for a Picnic!

The signs are all there - weather getting hot, kids finishing up school, pool opening and the ice cream man driving down through the neighborhood - summer is here. I know it isn't "officially" here but believe me it is here! :) One of our favorite things to do in the summer is to pack up a picnic and eat outside. One thing we look forward to when the weather starts to warm is WATER! The kids love to play and cool off in the water - in whatever form - sprinklers, slip n slide, pools, lakes, ponds, steams, rivers, OK you get the picture. We love water.
