Monkey Bars

My daughter, Abbie, and I got this recipe from the Better Homes and Gardens Cookies for Kids cookbook. These are very yummy and a great way to use up ripe bananas :)

Ingredients
3/4 cup butter (softened)
2/3 cup sugar
2/3 cup packed brown sugar
1 egg
1 tsp vanilla
1 cup mashed ripe bananas (about 3)
2 1/4 cups all purpose flour
2 tsp baking powder
1/2 tsp salt
1 cup (6 oz pkg) of semi-sweet chocolate chips
powdered sugar (optional)

Heat oven to 350 degrees and spray or grease a 15x10x1 inch baking pan. In a large bowl mix the butter, sugar and brown sugar on medium speed until fluffy. Add egg and vanilla and beat well. Stir in mashed bananas.

In a separate bowl stir together flour, baking powder and salt. With mixer on low speed gradually add the flour mixture to the banana mixture, beating well until blended. Stir in chocolate chips and then spread mixture into pan.

Bake at 350 degrees for about 25 minutes or until toothpick comes out clean. Let cool then sprinkle with powered sugar in desired and cut into bars.
